This spring green soup immediately won my heart. The combination of peas and coconut has some sort of a charming accord. The soup itself is simple and quick to make of easily attainable ingredients, so it suits a busy workday evening well.
Until winter battles spring outside and there are little islands of snow instead of green grass peeking out of the ground, frozen green peas from the freezer are a good substitute for the fresh green. By the way, green peas are one of the vegetables that doesn't lose its flavour much when frozen. The coconut green pea soup is from the Anna Jones cookbook where I took the recipe with small adaptations. 4 portions. Preparation time: 20 minutes
What's needed?
2 tbsp coconut milk
200g leek, chopped
a handful of green onions, hopped
500 g frozen green peas
400 g can of cocomut milk
4 dl broth lemon juice
pea shoots and fresh coriander
salt and pepper
olive oil to serve
How to prepare?
Heat coconut oil at medium heat on a frying pan, cook the leek and green onions for a few minutes. Add green peas, and pour hot broth and coconut milk on top. Rise to boil, lower temperature, and cook for ca 5 minutes. Remove from heat, sprinkle fresh coriander, season with salt, pepper, and lemon juice, and purée into an even liquid. Add pea shoots whtn serving, sprinkle with olive oil, and grind black pepper on top. Serve immediately.

Roheline hernes on, kusjuures, üks neid köögivilju, mille maitse toitudes väga palju ei erine värske herne maitsest ka peale sügavkülmast läbi käimist. Kookospiimaga hernesupi idee on pärit Anna Jonesi kokaraamatust, kust väikesete mugandustega sai see retsept ka enda jaoks sobivaks kohendatud. Sellest piisab neljale inimesele ja valmistamisaeg on 20 minutit.

200 g porrut, hakituna
peotäis rohelist sibulat, hakituna
500 g külmutatud rohelisi herneid
400 g purk kookospiima
4 dl puljongit
sidrunimahla
hernevõrseid ja värsket koriandrit

oliiviõli serveerimiseks
